Whole Chicken in Crock Pot with Rice

Wash chicken remove bag from inside. (No before picture)

Coat chicken with salt/pepper, put in crock pot with 2 cans chicken broth and a chopped onion (whoops I forgot the onion), cook on low for 8 hours. It will fall off the bone when done.
Strain 2 cups of the broth to use for rice. Bring to boil add 2 cups minute rice. Cover and let sit for 5 minutes until light and fluffy. The broth gives the rice a better flavor than water.

Put some rice on a plate with chicken on top and some steamed veggies on the side. Save extra chicken for future meals. Either my kids ate more than usual or my chicken was smaller than usual because I only have enough chicken left for one meal instead of my usual two.
